Chicken Chow Mein Casserole

This is a pretty unique recipe and I honestly don't remember where I got it. In all honesty, I haven't made it for years, but I had to include it because I remember how much we loved it back in the day.

Layer in 9x13 pan:
4 cups chicken/turkey, cooked and diced
2 cups chopped celery
1 cup chopped onion (~1 medium onion)
1 cup rice, uncooked
1 can cream of mushroom soup
1 can cream of chicken soup
1 can bean sprouts
Mix and pour over:
1 ¼ cup water
1/3 cup soy sauce
1 tsp salt (optional)
Bake at 350ยบ for 50 minutes. Remove from oven and add about 5 ounces of chow mein noodles sprinkled over the top. Bake for an additional 10 minutes.
