This salad is tangy and super satisfying.
½ c. red wine vinegar (apple cider vinegar works in a pinch)
1/3 c. sugar
1 tsp. salt
1 tsp. dry mustard
1 tsp. grated onion
1 c. vegetable oil
1 Tbsp. poppy seeds
Combine vinegar, sugar, salt, dry mustard, and onion in blender container, or use an immersion blender. Blend for 20 seconds. Slowly add oil and blend well. Stir in poppy seeds. Pour over 2 lbs. cole slaw. (I usually halve the recipe.)
