Texas Caviar

This is a unique "salsa," but it is so addicting and delicious. That's a good thing since it makes a LOT!

2 cans black eyed peas, 14 oz. each

1 can white hominy, 15.5 oz.

2 medium tomatoes, chopped

2 cloves garlic, minced

one medium green pepper, chopped

one jalapeno pepper, chopped (optional)

½ cup red onion, chopped

½ bunch fresh cilantro, chopped

One 8 oz. bottle Italian dressing

Drain beans, mix with remaining ingredients. Pour dressing over all and marinate overnight. Serve with tortilla chips.
