Creamy Lime Cilantro Dressing

 Another perfect touch for copycat Cafe Rio Pork tacos. I found this one from Our Best Bites.

1 pack (1 oz.) Hidden Valley Ranch Dressing Mix (I use the buttermilk variety)

Ignore directions on the packet

1 c. mayo

½ c. buttermilk (or milk works, too)

1 lime (2 Tbsp. lime juice)

2 cloves garlic, roughly chopped

½ c. roughly chopped cilantro

¼ c. green salsa* (just make sure the first ingredient is tomatillos)

          Place milk, mayo, and ranch in a blender (or use an immersion blender). Juice the lime in there, too. Toss in the garlic, cilantro, and green salsa. Blend it up. Make it several hours ahead of time to allow it to thicken. *Herdez is a common brand, but it’s way spicy. I really like the Essential Everyday brand if you can find it.
