French Toast Bake

1 package French baguette bread (or 2 loaves day-old Jimmy John’s), cut in 2” cubes

8 large eggs

3 c. milk

4 tsp. sugar

¾ tsp. salt

1 Tbsp. vanilla

4 Tbsp. melted butter

cinnamon sugar

Place bread cubes tightly in a sprayed 13x9 casserole. Beat eggs, milk, sugar, salt and vanilla. Pour over bread. Cover and refrigerate overnight (6-36 hours). Bake uncovered at 350° for 45 minutes. Remove, baste with melted butter. Sprinkle generously with cinnamon sugar. Bake 5-10 minutes longer. Serve with syrup or fruit topping.
